Spring is here! Everyone is excited to get outside and get together. Need something to bring to a back yard meet-up, porch gathering or block party? Vegetable trays are a staple, but let’s face it, they can be a little predictable. Here’s how to transform your vegetable tray from ho-hum to home run.
RUBY CRUNCH SNACK PLATTER
PREP TIME: 20 MINS / TOTAL TIME: 20 MINS
Ingredients
Seasonal vegetables, rinsed and cut
Mix-ins such as olives and nuts
Crackers
Dips such as a creamy herb, hummus and Ruby Crunch
Instructions
1. Grab a base such as: a platter, cutting board or large sheet pan*.
2. Arrange 3 small dip bowls on the base.
3. Fill the bowls with the dips. Pick one dip to drizzle Ruby Crunch over. Hummus pairs well and is a crowd pleaser because it is healthy, dairy free and gluten free. Make sure to have one bowl dedicated to Ruby Crunch because people will want more!
4. Arrange crackers in an open section.
5. Arrange the vegetables in the remaining open sections.
6. Fill in smaller sections with mix-ins such as olives and nuts.
7. Use greens to fill in the edges, if desired.
* Here we used a large sheet pan because most kitchens have one and they are sturdy for transporting
